Autumn soup from beyond the Arctic Circle

Nikkaluokta, located above the Arctic Circle, is a Sámi village known for a local soup named after the town itself, Nikkaluokta soup. In the past, it was served as cafeteria lunch in schools, and I was so taken by its simplicity that I decided to cook it myself. It turned out so delicious that I thought you should try making it and tasting it too.


Ingredients for 4 servings

  • 250 g ground beef (also tasty with pork)

  • 350 g cabbage

  • 1 tablespoon butter

  • 2 tablespoons mustard

  • 2 tablespoons tomato paste

  • 1 bay leaf

  • 2 chicken bouillon cubes

  • 12 dl water

  • 1 leek

  • 1 teaspoon salt

  • Freshly ground black pepper


For serving

  • parsley

  • bread

  • butter


Preparation

Sauté the ground meat in butter. Add the mustard, tomato paste, bay leaves, and crumbled broth cubes, and sauté together. Pour in the water and bring to a boil.

Chop the cabbage and slice the leek, then add them to the soup and simmer for about 20 minutes. Pour in the soy sauce and season with salt and freshly ground black pepper. For serving, chop the parsley to taste and sprinkle it into the soup.

Serve with bread and butter to make it even more filling.


Lunch on the Go

Since it only requires one pot to prepare, we can easily make this dish for a picnic while hiking in the woods. We prepare the ingredients in advance, pack them in containers or bags, and cook them on a portable stove during our trip.
