Traditional Swedish Pancakes

I recently found an older Swedish recipe for traditional Swedish pancakes. I thought I'd give it a try, why not? The batter is a bit more liquid than what I’m used to, but when it was cooked... well, the aromas and flavors I’m about to share with you now, with this classic Swedish pancake recipe, are simply amazing. You might end up making these from now on too. :)
Ingredients:
165g wheat flour
2 tsp vanilla sugar
0.5 tsp salt
5 dl milk
3 eggs
25g melted butter
a little butter for frying
Preparation:
In a bowl, mix together the flour, vanilla sugar, and salt.
Add half of the milk and stir until smooth.
Add the remaining milk, eggs, and melted butter. Let the batter rest for 15-30 minutes to allow it to swell.
Fry the pancakes in a little butter over medium heat until golden brown. For each pancake, lightly grease the pan with butter again.
Compared to regular French pancakes, this recipe has a much higher proportion of milk and butter, with much less flour, which makes it lighter and fluffier. You also fry it with butter, so it won’t feel greasy or heavy. Each pancake cooks quickly, so you could even make a few for a quick breakfast.
The rolling technique is a bit different too. Dust half of the pancake with cocoa powder (or fill it with other delicacies), then fold the pancake in half before rolling it up.
